Uncle Phil’s Perfect Steak

A Note from Phil

I come from one of the largest recorded families in Texas. We have over 12,000 recorded living relatives.

My dad, “Pops”, started the Lange Hookout Fishing Tournament 35 years ago for family and close friends.  We took turns every year volunteering to cook different meals.

A friend of mine, Mike Schott, Owner of Schott’s Meat Market in Helotes, TX, turned me onto wet aging steaks, so I volunteered to cook steaks one night.  I purchased a case of Certified Angus Choice Ribeye from Mike.  At 65 days, I went over, and Mike and I hand cut the steaks 1 ¼” thick.  We trimmed them up, seasoned them with my rub, and then vacuum sealed them.   I threw them all in the cooler and put them on ice.

My cousins and I cooked up the steaks along with some “Heart Attack” potatoes for one of the dinners and people would come up and tell me, “That’s the best steak I’ve ever eaten.”

The next year, my cousins started asking if they could buy some steaks.  I figure if they were willing to buy my steaks, others would be too.

This was the start of Uncle Phil’s Fixin’s.

We still honor my Pops and what he started. The Lange Hookout has always been about family, camaraderie, good times, and good food.  With this big family, you know that is a lot of “Perfect” steaks.

Our beef undergoes a wet aging process for 100 days. While our aging formula is proprietary, we guarantee the quality. The aging process helps break down the muscle fibers in the meat, resulting in an incredibly delicious, tender steak.
