What does the beef aging process entail?
Our beef undergoes a wet aging process for 100 days. While our aging formula is proprietary, we guarantee the quality. The aging process helps break down the muscle fibers in the meat, resulting in a delicious, tender steak.
What qualifies a steak as Prime?
The USDA’s Quality Grading process helps consumers make informed decisions on the quality of meat they purchase.
In beef, the quality grades you’ll most likely see in a grocery store are Prime, High, Average and Low Choice, and High and Low Select. The highest quality of these being USDA Prime and the lowest quality is Standard.
These quality grades effect the price of the meat and are determined by the amount of marbling inside the meat. Marbling is fat that has deposited inside the muscle. The more marbling there is, the higher the USDA Quality Grade will be.
What if I don't like the steaks I purchase?
Give us a call and let us know what you didn’t like about it. Sometimes over-cooking a steak can cause it to become tough or dry. Refer to our cooking guide for guidance on how to cook these high quality steaks perfectly. Unfortunately, we do NOT issue refunds on purchases, but we’d love to help you through the problem and we certainly love feedback.
How to cook the steaks:
Whether you are using gas, wood or charcoal, get your fire up to about 600 to 700 degrees. Put your steak on the grill and you should hear it sizzling. Flip at 2 minutes, Flip and rotate the steak after another 2 minutes. Again 2 minutes more on each side. Then place your steak on a plate and cover with foil and let it rest for 10 minutes. This will get you Medium Rare.
Remember, you can always put it back on a little longer if you want it cooked a little more.
For Uncle Phil’s Steaks:
Rare: 120-130 degrees Fahrenheit internal temperature.
Medium Rare: 130-140 degree Fahrenheit internal temperature.
Medium: 140-150 degrees Fahrenheit internal temperature.
Medium Well: 150-160 degree Fahrenheit internal temperature.
Well Done: 160-170 degrees Fahrenheit internal temperature.
What size are the steaks?
Ribeye steaks average 1 to 1.1 lbs each. Usually 1 steak will feed 2 people.
