
Ingredients:
- Uncle Phil’s Fixin’s ground sausage meat
- Bacon strips
- Pimento cheese
- Jalapeños, sliced
- BBQ rub
- BBQ sauce
- Mesquite wood or chips (for smoking)
Instructions:
- Prep the Sausage Meat:
• Let the ground sausage meat thaw in fridge, and when ready to use, soften at room temperature for easier molding. - Form the Burger Boats:
• Take a 1/2-2/3 pound portion of the sausage meat and mold it into a round, burger shape.
• Press the center to create a well, forming a “boat.” - Wrap with Bacon:
• Wrap outside perimeter of each sausage boat with bacon strips, securing the ends with toothpicks if necessary. - Stuff with Pimento Cheese:
• Fill the well of each sausage boat with a generous serving of pimento cheese.
• Lay jalapeño slices on top of pimento cheese.
• Apply light layer of BBQ rub. - Smoke the Boats:
• Preheat your smoker for indirect heat at 225-250F and add mesquite wood or chips.
• Place the bacon-wrapped boats in the smoker and cook until the sausage is fully cooked and the bacon is crispy. - Add sauce:
• Brush with BBQ sauce to glaze for last 20-30 minutes of cook. - Serve and Enjoy:
